From the cuisine of Nizami's (Hyderabadi)
Mixed Veg Nizami (Mix Veggie Curry)

Mix Veg Nizami is a medley of vegetables simmered in a richly spiced, aromatic gravy and is a staple in Royal kitchens of Nizams from Hyderabad.
INGREDIENTS
To Sauté & Grind

Butter - ! Tbsp

Garlic, finely chopped - 2 Tbsp

Ginger, finely chopped - 1 Tbsp

Tomatoes, finely chopped - 2 cups

Whole cashew nuts - 10 to 12

Green chillies - 1 to 2, depending on spice necessity (optional)
Mixed Veggies, cut into 1 inch pieces - 3 cups
• Carrots, Beans, Potatoes, Cauliflower, Capsicum (green, yellow n red), Green peas
To Sauté & Cook

Butter / Cold pressed peanut oil - 1 Tbsp

Onions, finely chopped - 1 cup

Tomatoes, very finely chopped - 2 cups

myleafy NIZAMI CURRY MASALA - 2 Tbsp

Paneer cubes, Fresh - 200g

Methi (fenugreek) leaves, dried - 1 tsp
-
Mint leaves, dried - 1/4 tsp (optional)

Coriander leaves - 1 Tbsp

Fresh cream - 1 to 2 Tbsp
• Salt as required • A heap of love!
METHOD
Step 1 : Pre-cook
Partially cook the veggies and keep aside.
Step 2 : Sauté & Grind
Sauté garlic, ginger, tomatoes, cashew nuts and green chillies in butter. Allow them to cool down and grind to a fine paste.
Step 3 : Sauté & Cook
Pre-heat a pan, add butter and sauté onions until they turn really brown. Add in the tomatoes and cook until they turn mushy. Also add our myleafy NIZAMI CURRY MASALA and cook until everything blends together. Lastly add the ground mixture, paneer and pre-cooked veggies, followed by fresh cream. Fix the consistency of the gravy to medium thickness with appropriate amount of water.
Crush and sprinkle the dried fenugreek and mint leaves. Mix well and add enough salt. Lastly garnish with finely chopped coriander leaves.
Notes: Veggies can be replaced by any type of meat. The amount of green chillies and the amount of curry masala vary with personal preference.
