Chettinad One Pot Mushroom Biryani

Chettinadu One-Pot Mushroom Biryani

Make a first-class one pot biriyani on a busy day with our “myleafy Chettinad BIRYAANI MASALA”

Spice level : Fairly medium

INGREDIENTS

  • Seeraga samba rice - 1 cup (200g)
  • Water - 2 cups
  • Peanut oil -1 Tbsp
  • Bay leaves - 1 leaf 
  • Small onions, finely chopped - 1/4 cup
  • Tomatoes, finely chopped - 1/4 cup
  • Green chillies, roughly chopped - 1 to 2, as required ( avoid fully if you need a non-spicy version)
  • Garlic cloves, roughly chopped - 4 to 6 pieces
  • Ginger, roughly cut into 2 inches - 2 pieces
  • Mushrooms (oyster or button), cut into 1 inch pieces - 1 cup
  • myleafy Chettinad BIRYAANI MASALA - 1 Tbsp or 10g 
  • Coconut milk, thick - 1/4 cup
  • Mint leaves, finely chopped - 1 Tbsp
  • Coriander leaves, finely chopped - 1 Tbsp
  • Ghee - 1 tsp 
  • Salt as required
  • Heap of love!

METHOD

Step 1 : Pre-cook

Soak Seeraga samba rice in 2 cups of water for 20 to 30 minutes. Grind ginger n garlic to a paste, check whether they together make 1 Tbsp fully. Grind green chillies (if you are using) and keep aside.

Step 2 : Cook

Heat oil in a pressure pan / heavy bottom pan with lid.  Add the bay leaf, followed by onions. Sauté onions until they turn brown and add ginger n garlic paste + green chilli paste. Mix evenly for 2 minutes. Add the chopped tomatoes and cook until they turn mushy.

Sprinkle the myleafy Chettinad BIRYAANI MASALA and mix well. Cook until the oil oozes around the sides of the pan. Add mushrooms, followed by coconut milk. Slow cook for 2 minutes and then add rice along with water. Sprinkle half of the coriander n mint leaves and salt as per your taste. Mix evenly and pressure cook for 10 minutes.

Step 3 : Garnish

Once done, add a tsp of ghee and coriander n mint leaves. Mix gently, serve hot with onion raita and a heap of love!

Note: Basmati rice can also be used. Mushroom can be replaced with Meat/Seafood/Mixed Veggies/Jack fruit/Panneer/Soya chunks, etc., Small onions can be replaced with large onions. Throw in some cashews for a richer experience. If you have a thin coconut milk, just add 1/2 cup.
