Classic Tiffin Sambhar

Make an easy peasy urban style sambhar that goes well with Idli, Dosa, Pongal, Vada, Uthappam, Paniyaram, etc., in 7 minutes
INGREDIENTS
- myleafy 7 minutes Sambhar Pre-Mix (Madras-style) - 1.5 to 2 Tbsp
- Onions, roughly chopped - 1/4 cup
- Ghee / Peanut oil - 1 Tbsp
- Mustard seeds, black - 1/4 tsp
- Curry leaves - 10 to 12
- Red chillies, dried - 1 to 2
- Any vegetable, roughly chopped - 1/2 cup
- Tamarind - 1/2 tsp (optional)
- Jaggery - 1/4 tsp (optional)
- Coriander leaves, finely chopped - 1/2 TBSP
- Salt as required
- Heap of love!
METHOD
Step 1 : Pre-mix
Add 1 to 1.5 cups of water, little by little to the Sambhar mix in a thick bottom pan/bowl and blend evenly without lumps.
Step 2 : Cook
Cook this mixture upon low flame by continuously stirring for the first 2 to 3 minutes. Add the veggies and allow to cook until they turn soft and the mixture thickness.
Add in the tamarind paste and jaggery, if needed.
Step 3 : Temper
Temper with Mustard seeds, curry leaves and red chillies Switch off the flame and garnish with coriander leaves plus a heap of love!
Serve hot with Rice, Idli, Dosa, etc.,
Note: Mixed veggies like drumstick, ash gourd, pumpkin, carrot, potato, brinjal, lady’s finger, broad beans, etc., can also be used here.
